Sticky Pork Ribs with Ukrainian Hot Sauce

Ribs that fall off the bone: first slow-cooked in foil at a low temperature, then coated in a sticky glaze of MADESA “Ukrainian Hot” Sauce, honey and soy sauce. The tomato base with apple purée and chilli caramelises in minutes under high heat. All in the oven: no barbecue, no smoke.

Sticky Pork Ribs with Ukrainian Hot Sauce

Ingredients

  • 1.5 kg pork spare ribs (2 racks)
  • 1 jar (485 g) MADESA “Ukrainian Hot” Sauce
  • 3 tbsp honey
  • 2 tbsp soy sauce
  • 2 tbsp apple cider vinegar
  • 1 tbsp smoked paprika
  • 1 tsp garlic powder (or 3 crushed garlic cloves)
  • 1 tsp salt, ½ tsp black pepper
  • 1 tbsp sunflower oil
  • spring onions to serve

Method

  1. 1

Remove the thin silvery membrane from the bone side of the ribs: lift it with a knife and pull it off with a piece of kitchen paper.

  2. 2

Rub the ribs with the oil, salt, pepper, paprika and garlic. Wrap each rack tightly in foil.

  3. 3

Bake at 160 °C for 1 hour 45 minutes until the meat pulls away from the bone easily.

  4. 4

Meanwhile make the glaze: combine the Ukrainian Hot sauce, honey, soy sauce and vinegar in a small pan and simmer for 5 minutes until slightly thickened.

  5. 5

Unwrap the ribs and pour off the juices (stir 100 ml of them into the glaze). Raise the oven to 220 °C or switch on the grill.

  6. 6

Brush the ribs generously with glaze and bake for 10 minutes; brush again and bake for another 5–8 minutes until sticky and caramelised at the edges.

  7. 7

Rest for 5 minutes, cut between the bones and serve with the remaining glaze and spring onions.

Tip: The sauce already contains chilli; for a milder version, replace half the jar with the mild MADESA “Ukrainian” Sauce.
