Beans in Tomato Sauce with Smoked Sausage

Ingredients

  • 1 jar (700 g) MIRASA Beans in Tomato Sauce
  • 300 g smoked sausage (krakowska or similar)
  • 1 onion, diced
  • 1 red sweet pepper, diced
  • 2 cloves garlic, chopped
  • 1 tbsp sunflower oil
  • 1 tsp sweet paprika and ½ tsp smoked paprika
  • 100 ml water or stock
  • A small bunch of parsley
  • Freshly ground black pepper; salt only if needed
  • Rye bread, to serve

Method

  1. 1

Cut the sausage into 1 cm half-moons. Fry in a dry pan over a medium heat for 3–4 minutes until the edges brown and the fat renders, then lift out.

  2. 2

Add the oil, onion and sweet pepper to the same pan and cook for 6 minutes until soft. Stir in the garlic and both paprikas for 30 seconds.

  3. 3

Pour in the beans with all their sauce and the water, return the sausage and simmer gently for 8–10 minutes, stirring now and then.

  4. 4

Season with black pepper. Taste before adding any salt, the sausage and the sauce are already seasoned.

  5. 5

Rest for 5 minutes off the heat, scatter with parsley and serve with rye bread.

Tip: For a thicker stew, crush a quarter of the beans against the side of the pan. A fried egg on top turns it into breakfast.
