  • 3 spring onions, sliced

Method

  1. 1

Tip the Mexican Fiesta into a sieve over a bowl and leave for 5 minutes so the excess sauce drains off (keep the sauce, stir it into the sour cream for a dip).

  2. 2

Lay out 4 tortillas, sprinkle with half the cheese, spoon over the drained vegetables (about 100 g each), the spring onions and coriander, then the rest of the cheese. Cover with the remaining tortillas and press down.

  3. 3

Heat a dry frying pan over medium heat. Brush the top tortilla lightly with oil, lay the quesadilla in oiled-side down and cook for 2–3 minutes until golden; flip with the help of a plate or a wide spatula and cook for another 2 minutes until the cheese has melted.

  4. 4

Repeat with the rest, keeping the cooked quesadillas warm in a 100 °C oven.

  5. 5

Cut into quarters and serve with the lime wedges, the sour cream dip and avocado.

Tip: Works well for a quick lunch service: assemble ahead and fry to order, a 480 g jar fills four 20 cm quesadillas.
